Probably due to sculpt and joints being designed to bend backwards instead

Forward isn't so hard, the sideways torso articulation is what's always lacking. Out of those figs only the Ikea mannequin can do it.

Because you're trying to mimic an entire spine with one or two joints. It's not like an elbow or knee where it largely bends in one direction. That and you then have to hide the cuts in a neutral pose too, which means you have to have enough material to cover but still not hinder the spine. You almost need more joints but implementing that while looking good is hard. Especially when people have different clothes. Double ball joints and soft torso and abdomen might work out good.

Yeah, across various toylines I've also noticed this.

I think it's mostly a stability issue, like in the case of toys with metal frames.

There's also figures that transform which often have to compromise the whole torso like Macross' variable fighters. Though the newer designs have transformations that have begun to work around this limitation.

IMO one of the hardest joint setups to do well, up there with ab crunches, is the pelvis. Getting a hip setup that allows for good range without looking atrocious in more dynamic poses is really hard, especially when you factor in thigh swivels. I feel like Snail Shell and Second Axe have done them the best with the "twin stalk" hips (that is a double-ended balljoint armature for each leg going into the torso with a floating pelvis overlay). SHF's newer hips are pretty clever with the "shrouds" that can cover over the joints as the figure moves without leaving gaps or inhibiting joint range but they only work for certain character designs.
