Some people just like using a 100% perfect copy to play a 100% intact (glitch free, etc) on their 100% perfect console using controllers that they're 100% familiar with, instead of the shoddier alternatives of using third party controllers, glitchy emulators, and tiny monitors.
Of course, i really don't consider myself a collector of old games and wouldn't pay a fortune on them, except for the fact I bought almost everything as it was coming out and never got rid of it.
I still have a 36" CRT (that has lasted longer than multiple LCD TVs, because old stuff was made to last) and I still have a blast playing old games. I keep my games in normal media office furniture. Older games go into drawers, newer ones stay out. No clue on the value of my games, as i honestly don't care.
Also, your description of the collectors sounds an awful lot like people who only buy shit to put on their shelves.
