Hiroyuki is running out of money, so he's proposing, among other stuff, to reduce the size of available dishes so the waiters aren't overloaded carrying entire buffets on their backs.
Your proposal, to remove boards, is the equivalent to get ride of some old refrigerators and moving the content into some other. Yeah, it would save some cents in energy bills, but the waiters would keep asking for heavy payments for all the work.
