I think anime gets dumped out at such an incredibly high rate these days, that you have to sift through a lot more to really find something more unique or good.
Sure, its true that there are still anime in all sorts of genres these days, but it seems like in the 90s and even in the 00's there was no shortage of action, adventure, horror, mecha, etc. It just felt like they were more unique because they were trying to form new worlds with interesting stories and characters. Now obviously, that doesn't mean every single anime from back then was great, or good, or memorable, it just seems like more things stood out.
Maybe part of the current trend has to do just with the way Japan is changing. They've always tried to maintain this proper, formal culture, society, and life-style, which seems to lead to the increased stress, depression, etc.
I think that's why so many of these anime tend to be about highschoolers who just want to hold onto childhood forever, and be young rebels since so much is expected out of them that it just becomes exhausting so it resonates with more people.
