Your best bet is the Disney Store exclusive Marvel Select Thor which is probably the best vanilla Thor figure with updated articulation (the figure on the left in pic-related).

What is generally thought to be the definitive Captain America figure? I had the wolfcap hasbro but not exactly a fan of the grim reaper body mold. I also had the AY but not fond of it (despite me loving other AYs). The head is too small even for AY figures, compared to Deadpool, Spiderman etc. And I don't particularly like Mezco, so I guess by processs of elimination, what do you guys think is the best cap legends figure?

There really isn't one at this point. The Amazing Yamaguchi is too divisive, and none of the currently released Legends especially stick out as being great. 80th anniversary Cap looks to be the best one we will have gotten so far, but even then I don't think I'd be able to call it definitive.

Most of the time, the joint bending from the head is so easy to fix it's just expected.
