I love building gunplas and models in general, but recently moved to a dorm and have limited space. I find the process of building itself fun as it satisfies my autistic brain of following menial instructions, so I'm looking for something as a replacement that can be assembled and easily disassembled like Lego, except well, I want to know if there are any other alternatives besides Lego you guys can recommend.

I tried puzzles, but it's too chaotic of a process for me.
