If you want that iconic ribbed knit look, and don't have a fabric store nearby, look for some lightweight girl's socks like pic related.
A pair of needle nose jewelers pliers are really handy for turning small things like doll clothes.
Use FrayCheck or a little fabric glue along the edges of the pieces to keep them from fraying.
Knit fabrics are a pain in the ass to sew by hand, and require specific stitches that can stretch. Here's a tutorial.

I suggest you make a sloper for Shizue (sort of a pattern blank tailored to her proportions), because her body shape is enormously different from the pattern.
