That's mainly the big reason Transformers stick around, mass media appeal. There's always a cartoon or comic or major movie going on to keep the kids invested. G.I. Joe as a franchise hasn't had the same success when it comes to constantly reinventing itself as Transformers has, as such it never sees the same success on toy shelves as Transformers.
Also, the thing that made Joes so popular back in the 80s are things that are harder to sell nowadays. That being larger vehicles and playsets. Stuff most stores would prefer to not have clogging their shelves year round.

You mean the toyline where Destro has a freeze gun, the Predator joins Cobra, Jungle Vipers rock techno-ghillie suits, there are literal mech suits, Firefly looks like a god damn Alien, Duke carries a giant multi-rocket launching back pack, multiple figures use weapons from the Colonial Marines and one guy has quite possibly the BEST Jet-Pack the G.I. Joe line has ever produced? THAT's the line you're gonna call "ultra realistic"? And that's not even getting into the Ninjas and Robots.
PoC was the best line, but it was very much a suped up future tech based concept line going straight up MGS on everyone. Which incidentally, is exactly what G.I. Joe needs to do.
