UCS got a nice model around 2014, much better than the original from 2000.
Minifig scale is pretty hard to decide upon because they get unnecessarily larger with every iteration and all have ups and downs.
My personal favorite would be 2012 overall, no too obvious mistakes.
2018 has a more accurate windscreen and thus shape but its far too large and the new helmets with orange visors are terrible.
The sets from 2004 and 2006 have been used in the Lego Star Wars games if you have nostalgia for that.
1999 & 2002 will always stay the true original Lego X-Wing.
As someone who likes to mod sets I decided to just design my own X-Wing based on other peoples MOCs but that's time-consuming. I don't know why but the X-Wing is the hardest SW vehicle to get the right shape of.

buy random used parts by the pound in hopes somebody left complete sets in it that you want?
My personal favorite is waiting for auctions of complete sets during christmas time, most people don't have the time or forget to bid then.
