Girls like playing with colorful horses with cartoonish playsets because developing girls focus on color patterns, shape and size differentiation, and narratives.
Eventually the other parts develop too, but by then they've grown out of toys and into other things, which is why teenage girls might shift into baking or crafting, things that require structure and planning, and teenage boys tend to gravitate towards games and sports, which have bright colors, narratives, etc.
