Same basic rules of train models, lots of this foliage is train stuff available in most hobby shops. Water is most likely resin or glue with added paint texture

honestly the most difficult part of that Diorama is likely weathering the Gundam to that degree and still look good. It's pretty easy to bullshit terrain to looking super professional.

Just build the Zaku, then go battle with, then lat it down in a beach, wait a few years for shit to grow on it, have a few locals play around it and then shrink the scene to your desired scale. Pretty basic stuff, anon.
