Cartoon Vos is basically a different character and had zero appearances aside of the Ziro episode and the Dark Disciple novel that made him Ventress' husbando.
I would rather have an OC based on more Samurai/japanese influences to fit the shows style. Someone like Dass Jennir in Red Harvest mode but they don't have to cast a CGI-deaged George Lucas.
Luke would be great too and work well. Weren't there even rumors that Hamil will appear in something cartoon based around the time Resistance was announced to be ending? Maybe he did VA work for Mando and his S2 appearance is just a model/Stunt guy with CGI enhanced face and actual casting will only be in S3, or the reveal will first be in S3 at all. Both would be easy to keep under wraps.
Cal Kestis can also be discounted completely since he will have a game series to himself and the RC Delta Squad didn't get any more appearances aside of one cameo in TCW because Filoni claimed they didn't want to throw a wrench in there by doing an actual story with them for if they turn up in a game or book again, same reasoning should be applied to Cal.
Ezra is also still missing timeline-wise and will stay missing since Mando Ahsoka is closer to Rebels Ahsoka than Gandalf Ahsoka, the latter who still searched for Ezra.

The yellow & red spots are really off putting. They stand out like a sore thumb on a neutral/cool color pallet that the main body of the Falcon has. Like it just hit a hot dog car cart and got splattered with ketchup & mustard. Either blend in those warm colors with the off-white base your mixed for the Falcon's main body color. Or better yet, have the falcon's main color be a VERY light tan for that "left out in the desert" look.
Next is the panel lining. DON'T use black. You can get away with black in a dark, cool colored ship like a TIE or Star Destroyer, but not the Falcon. Since we're going for a desert look, I'd use some light burnt umber for a more rusty, sun bleached look. DON'T hand paint those panel lines. Use several washes. Have one wash of the umber mixed the yellow and one mixed with the red to add more cohesion to those colors.
The cloth needs to be darker and look less like a plastic bag melted on it. I would invest in a yard or two of something dark brown and VERY thin, but not see through.
Hope this helps. I know I sound critical, but I've seen worse. You're on the right track to getting better.

I also like how they retconned/resurrected the main villain of a Rogue Squadron Game into one of the goofy officers during Vaders arrival in ROTJ.

Rian Johnson deliberately ignored that (the books author also created Holdo and was listed as having worked with Johnson around some of the scripting on TLJ). JJ Abrams then decided to go double down on the retcon to have Leia pretty well complete her training.
