Some do, or have. DCUC hips have their functionality, and they don't look right. Lots of figures with internal frames use them as well.

Figma does. They released joint packs, too.
Revoltech does as well, it's their whole thing.
S.H. Figuarts does to some extent, they use joints similar to Figma on other figures, and then they also have their own joint types.

Hasbro? Oh no, it's not Universal joints. It's Universe bodies.

The 'ball shaped joint' is not the same as a universal joint as pictured by the OP. The center axis on the universal joint can pivot in two directions, meanwhile the joints you're talking about bend in only a single direction and only moves differently when swiveled. The ball-shaped joint or Figma's disc joint function similarly, but can't bend in both ways at the same time like the universal joint can.

Doesn't change the fact that it's a cumbersome design and wouldn't add much in the way of realistic movement for most things. Not to mention the standard design is limited to around 90 degrees of bend in either direction.

Coupling joints could work for the midriff, especially when the gaps are part of the aesthetic you want to go for.

Nothing to complex for lego. Though they need a lot of nail polish to tighten up the joints to be pracitcal for articulation in Bionicle MOCs.

Looking at these, the friction areas are way too small. Figures using these would become floppy as fuck in the blink of an eye.

To be fair, omnidirectional movement is easier to achieve with a coupling joint, than you could with a revoltech-esque joint. All that at the cost of larege gaps and small friction areas.
