For the actual sets it depends.
Cobi only does enough space for you to slot in figures. Even then i usually have to modify the construction for more legroom. To their credit, they tend to make actual functioning hatches where they should be as opposed to only duds with prints on them. Cobi tanks are otherwise completely filled up construction wise, with the exception of hatches to access the engine bay.
Most bootlego will do a drivers and hatch postions and will have hollow space inside; just usually not very usuable space. Dud hatches understandably exist too, swivel hatch type construction is the only way to do drivers hatches sometimes but people rarely design them.
Xingbao and Kazi do go the extra mile and will model (albeit cartoonishly) distinct fighting, drivers, fully built engine and ammo compartments.
For stuff like external stowage it really depends. Some bustles are functional, many are purely cosmentic and would require string or blu tack to tie shit onto them. Much of the builds tend to be tiled over too so that also reduces attachment points to stow the crews personals.
