It takes longer for fresh veggies to get to your local super market than for them to be processed at wherever they produce those soups.
Vitamins n shit start to decompose as soon as the plant is harvested and super market shit needs to be distributed at various warehouses before they make it to your local place. So super market veggies travel more and longer, and despite refrideration, they''re going to lose some of their nutrients.
You need to get locally grown stuff to get the full amount of nutrients from them. Other ways to get the full package is if they're frozen or if they're fruits that ripen as they travel along like pears, peaches, and bananananas.
That said, there's so few veggies in packaged noodles that they're insignificantly nutritional and are mostly there for taste/color.
