I think the best age of Lego Star Wars was in that early transition phase around 2004-2007, when the company was starting to be financially successful again and introducing new parts and molds. You get lots of curved, nice looking pieces, some printing, specialty figure molds for aliens, etc but it still holds a lot of that classic Lego-y aesthetic.
The first star wars video game really encapsulates the best look imo. Christo did some custom figures based off of it, and it's kind of the direction I wish Lego had kept going with the line. The figures are definitely a lot more charming and cute than what's offered now. Although I reckon most Lego fans would prefer what we have.
