Malcolm would have been too obvious and easy, so I'm glad they didn't go that route, killing Barry in Malta for some stakes and then killing either Owen or Grant in the finale would have been based.
I actually like that the dinosaurs weren't that central to the plot of the movie beyond the obvious. It really does sell the notion of a world populated by dinosaurs to just have them pop up at inopportune times, and reminded me a lot of something like Xenozoic Tales, which takes place in a world populated by dinosaurs but rarely centered the story around them.
Anyway the extended version is a much, much improved version of the film. You can really tell that this was the original cut and that the studio forced a hack and slash job to keep the movie under 2 1/2 hours. Lots of minor additions and slight editing changes greatly improve the flow of the movie, regardless of your opinions as to how good or bad it is.
In terms of more dinosaurs on screen, there's the restored prologue in the movie, there's a bit more stuff with Blue, a new dinosaur fighting pit sequence in Malta, and a bit more dino chaos during the Malta breakout. If you ever plan on watching the movie again, this is the way to watch it.
