1st and 3rd form look good, 2nd could use a bit more differentiation from the others. Also, he looks very "minty" with that color palette, starters tend to change colo with very few exceptions, so maybe change up the 2nd form colors and even the 3rd form if you want. Cool concept though.

Not sure Panthorn is the right name for the 3rd evolution. The body type seems more leonine or maybe a sabertooth tiger. Other than that, I really like it

Would be cool if they some flowering buds that grow into little red berries by the final stage.

Also differentiate the 1st and 2nd stage more like others said, and maybe make it a darker green as it grows, though I like the mint for the 1st stage

But as it is it's a 9/10 concept and 6/10 execution. Refine a little bit and you'll up the execution score

Erase the second stage, make first stage the second stage, make the new first stage a mouse. Bc I think that's a more interesting take on the lion paw's fable to have the mouse become the lion.

The mane on the first is pretty ugly honestly. Make it naked or like a single leaf or two to imply a tuft. I don't mind the "it just gets bigger" thing at all. Yeah the first two are a little similar but fixing the mane should do it. I second Anon suggesting red berries. They're usually poisonous and will bring some pop of color. And right now there's really nothing suggesting this type is part poison, not even a manticore tail.
