There is demand for all grades, 9s are actually the most liquid grade. Raw cards sell super fast. The only people that have ads up for months price theirs way too high for their condition, so that's why you're only seeing them -- it's survivor bias.
2)English and Japanese are the only languages that matter. All others will sell for significantly less. There are some meme things like psa10 portugese 1st edition base set cards because their population is like 7, but don't concern yourself with that
3) Europe's market is smaller, due to population, relative interest, and the fact that everyone speaks a different language. But the market is still massive. You're talking about the largest media franchise in history.
4) The popularity of the pokemon, the artwork, and the rarity of the card determine value. All factor in certain ways, sometimes predictably, sometimes not so predictably.
5) I would look at the cards that you find visually appealing, then look at the bottom corner where it says "Illustrated by: ___" then search for cards illustrated by those people.
