Because it's easier to keep the muddy washed out/plastic artstyle for the Pokemon that the 3DS games and SWSH used than to bake detail and lighting into the textures like every other AAA game.

Prove it. Because BDSP looks better than SWSH and LGPE looks better than both because it doesn't have them and also has a legitimate artstyle instead of the same muddy garbage.
