Sometimes. I care about nature a lot more now, but only on the more common pokemon, because there will always be something in the back of my head saying that I'm training a weaker pokemon and that I'm shooting myself in the foot. But for something rarer, like Raltz, I'll just take it no matter what it's nature is because I'm not walking around in circles for another hour or so.
As for competitive battling, there is so little incentive to not just make a full battlecruiser team during the main game. Most trainers have 3-4 pokemon max, it is not worth it to get everything all set up to sweep or stall when you can just brute force your way. The only one I can think of off the top of my head who will actually check and possibly punish you on this is Cynthia because her team has so much coverage.
