I am not concerned with the encounter since either will give me the stat I want. I will sometimes get +10speed, +40SpA, I will sometimes just get +50SpA. Upon reaching a high enough SpA, I will just change to power anklet for speed. I will, statistically, encounter hordes that give me "wrong EVs" once or twice by overdoing one stat.
The easier example is training Attack with another stat. Well, just go to Rainy Route and pop a power item that isn't Attack. You're more or less guaranteed +20attack since two out of three hordes are +20 attack and the third is a rare horde. You are training Attack and stat2 at the same time. You swap out to +Attack power item once your other stat is capped.
