Probably a lot of it has to do with the animation and art style of anime in general at the time. I also have the same question as you OP, is it simply nostalgia or is there an actual defined explanation as to why episodes from Pokémon's original series is more enjoyable compared to later series? Was there passion and care to the anime's earliest seasons that later disappeared after the anime became a perpetual commercial for the rest of the franchise?
To me, even a boring Johto filler episode still has something nice to look at. Advanced Generation maintains some charm, but Diamond and Pearl onwards comes off as too sterile.
