Making them like 20-30% larger would be fine as long as those changes are justified with new content, otherwise you just end up with a larger space with buildings that serve no function.
Besides, you can make a city feel large without making the map physically bigger. Pic related. The map is relatively small but it still feels like it's big because of how the map makers used their assets.
