Other than pokemon that I'd inevitably rescue from bad situations and take under my wing, because that's the kind of person I am, I'd likely end up with a Rapidash for riding purposes.
>Story:
As a young boy from Blackthorn visiting Goldenrod, I came across a runt Pidgey just outside the outskirts of the city that fell out of her nest, injured by a swarm of angry Sparrow, and was close to becoming pokefood. After jumping in the way of a few scratches and pecks and carrying the Pidgey to the pokemon center to be treated, I found she didn't want to return to her nest. Her siblings rejected her and tried to push her away.
So I took the poor orphan under my care as I brought her back to my hometown, naming her Little Cheep. Over the years, hiking in the surrounding mountains and participating in the occasional battle found a love for flying maneuvers, and encouraging my lil' Cheep to grow stronger. Our partnership eventually allowed her to evolve to a rather large Pidgeot, one that I could actually ride, and once I figured out how, I was instantly hooked on the joy of flying.
Over time, we got so good we could put on acrobatic shows, even getting some attention from the more elitist dragon trainers who either challenged us in flying competitions with their flying Dragon pokemon or asking for training and pointers on how to get a better grip on riding. Eventually I decided to offer training for money and made a career out of it.
As I progressed and got more money, saving quite a few trainers lives with knowledge on how to safely fly beyond the sketchy tactic of cramming an HM on their pokemon and calling it a day, I expanded outwards and flew around the other regions, partnering with whatever pokemon that I wanted to try my hand at riding, or rescued in bad situations, even going as far as Unova for their pokemon.
