I'd say the hardest part would be learning how to speak, everything else could easily be gained in about a year or two depending on the pokemon's base intelligence and how quick a learner they are. A big part of learning/mimicing humans would be having to live among them, so you'd need to spend a ton of time in a city/town with other humans and learning by exposure and experiences.
