Everyone else is either a fat stall wall in a slow game or has no moves. I realize Flareon was the subject of the no moves meme but here it at least gets a sizeable attack stat and good sp.atk.
Flamethrower/Fire Blast/Overheat
Dig/Iron Tail
Shadow Ball
Body Slam / Quick Attack
STAB to make up for lost power
Dig/Iron Tail to damage opposing Rocks
Shadow Ball for extra coverage against bulky psychics.
Body Slam if you can afford it or just use Quick Attack to offset speed
The next best would be Vaporeon. Its more of a tank and gets water/ice/dark coverage which is decent enough coverage.
Jolteon, Espeon basically only have STAB to spam and Umbreon can be a nice wall itself if you want that but as mentioned it makes the game fucking slow but hey if you have the time.
Of course you could just say fuck it and give jolteon shit like shadow ball or spam espeon psychic i mean its a fuck easy game and doubles all the way so your partner should handle what mons the eeveelutions cant and you'll beat it without much of a problem no matter what you do so long as you're not dumb
