Fighting is a good immunity. I just don't think it's worth being weak to Knock Off.
Normal is exceedingly rare, and tends to only be used by shitmons without anything better to use, Boomburst and Extremespeed notwithstanding.

Poison resist is basically irrelevant, but Fighting, again, is a pretty nice resistance. It's just not worth being weak to EQ, I don't think.
If it covered Electric instead of Grass, I'd say it would be a worthwhile trade, but being weak to BOTH sides of the classic coverage combos isn't good for something trying to be defensive.
Bear in mind, I'm not saying Toxapex isn't good, or that there aren't niches it can fill as Water/Poison that it couldn't as mono-Water.
