If we're allowed to say Primarina might be based on a selkie, women who transform into seals and back, I don't think it's really weird at all to include a myth about ravens LITERALLY transforming into knights as possible potential design inspiration for Corviknight.
Also yeah, it probably is true that whoever gave Corviknight their English name was intending to evoke the word night in addition to knight. It's an intimidating dark knight with a purplish night-black color palette.
