Don't really care much for gyms since they're discussed to hell but I would love if they finally made an E4 with Fire, Water and Grass, maybe throw in Electric too. The idea that the starting types you pick from are all 'mastered' and are main parts of your final challenge before you fight the champion has always been pretty cool thought to me. I give mention to Electric because Pikachu was an option as a starter and it could round up a decent E4.
