Winesap the Vaporeon: Vappy is basically the perfect Water type for Gen I - great stats, awesome stabs, good for TMs.
Red Prince the Tentacruel: Once I lost Vappy, Tentacruel was weirdly my saving grace. Another Pokémon that's amazing in Gen I.
Bismark the Hypno: I've always really wanted to use a Hypno but generally don't have a reason to or a good chance for it. Hypno is weird in that he's not quite as fast or specially equipped as Alakazam or others but his balanced stats make him pretty useful. I was able to beat the shit out of Gary's Zam because his Headbutt was not super sucky.
