So far, the best alternative I've found is actually this one. Certainly not the MOST cuddly, but more conceivably cuddly than an Eevee-shaped Gigalith like a lot of the designs essentially are. I also think it's a more interesting way to bring across the essence of the rock type, since rock is also heavily associated with fossil-mons and other prehistoric-passing creatures like Relicanth. I even had a thought that you'd be able to get it by taking the fossil of an ancient ancestor of Eevee to be revived, only for the scientist at the lab to tell you that the fossil was too badly degraded... but curiously it seems to have remained charged with energy even after they gave up the attempt... This charged fossil would then act as an evolution stone to turn your Eevee into Tricereon.
I don't think this design fits all of my criteria nearly as flawlessly as Bristleon does (it's a bit more out of place compared to other Vees, is less visually interesting shades of brown, and I haven't been able to conceive of a unique gameplay niche for it), but Rock is a TOUGH one, man (no pun intended), so this is the best I got so far. Unless anyone has a better suggestion.
