That's why there are high school students, doctors, archaeologists, bankers, and more, those who dedicate themselves to being full-time Pokemon trainers are the equivalent of athletes in our world, not all of them make it, even most Gym Leaders have a secondary job to live.
This is a silly analogy, but perhaps the Pokemon journey is like the Amish Rumspringa where a person decides to explore the world as a trainer, but if they decide that's not their thing they will return to a normal life.
