If you look at their hind legs, especially Bisharp's and Kingambit's, they do somewhat look like deer legs, with hooves and everything. Notably, the family they reside in is made up, so the author isn't associating them with any real ungulate but merely pointing out that they have ungulate characteristics. There could have been several other ways to classify them (as a beetle, or a monster) but I dig the ungulate classification because it's novel and sensible at the same time.
