I just finished a run of Red using only 1st stage mons and it was actually pretty fun.
I enjoyed building a team and didn't feel guilty about picking the strongest available pokemon because I was already handicapping myself.
The only downside was having to manually cancel evolutions after every level up but that became habit after a while.
My gen 1 team was Dowzee, Charmander, Doduo, Bellsprout, Gastly, and Staryu.
