The ones with the best gameplay are going to be the 2D games. If you're looking for aesthetics between those, you'd probably want either Heart Gold/Soul Silver or Emerald. The former doesn't have very diverse biomes, and the pool of pokemon is a bit more limited, but it is comfy.
If you ABSOLUTELY NEED it to be between Sword/Shield or Scarlet/Violet, go with SV. It isn't good, and does not qualify as beautiful, but it does at least have the open world aspect going for it. SS is basically the combination of the most degraded aspects of the linear games combined with the empty, ugly open field aspect of SV.
