This might be a hot take, but I really like when gym leaders or E4 members have one or two off-type Pokemon that still match the theme or vibe of the trainer, and I wish the games would do it more often. It makes the battle more interesting and less easy to sweep, and it adds more personality to the gym leader beyond their type specialty.
I think Morty's Stantler, Jasmine's Corsola, Clair's Lapras, and Lance's Zapdos in this rom hack are all great additions.
