Honestly they're just silly, simple games. They have good difficulty, simple but charming stories, and are typically easy to pick up. They're good for both beginners and veterans alike. Unless you absolutely must play in order I recommend starting on III, IV, or V (my first). VIII is also quite liked but I'm just playing it now on 3ds and don't like it much personally though MANY people love it. VII is my favorite personally but it is not recommended as a first, or even second game.
Also V is kind of proto pokemon, monsters join and fight with you.
