I imagine it would be from the Japanese breed of cattle called Wagyu which has black skin like the paldean Tauros, for the first DLC having a Japanese theme reinforces this.
The treatment of Wagyu Cows consists of leaving the animal as calm as possible so that its meat does not become tough due to stress, which is why it is considered the most expensive meat in the world. The type would be psychic, since the type is related to the power of the mind and according to eastern religions one of the ways to strengthen this power is through mental relaxation (as seen in the move calm mind) just like the cow that needs to stay calm throughout your life for your meat to be delicious.
I found out that there are 3 variants of Wagyu Cows and so we could have 3 paldean miltanks equal to 3 paldean tauros.
