Snorlax is an interesting case because despite it's massive dietary needs it isn't actually a carnivore. The Pokedex explicitly states that Snorlax is 'docile' and that it's safe to be around, but also that it will eat ANYTHING: rotten food, moldy food, poisoned food, this is most likely the Pokedex' childish way of saying Snorlax will eat carrion.
Snorlax would probably taste fucking awful because depending on the conditions available; it's basically the street cleaner of the wild.
I'd imagine Snorlax would prioritize 'better' foods like nuts, fruits, shoots, mushrooms, startchy vegetables, abandoned carcasses, and then carrion, before finally moving on to empty-calorie vegetation like bark, grass, bamboo, etc.. Anything to satisfy their hunger.
It isn't surprising there's usually only 1 or 2 Snorlax encounter in games and encountering them is considered rare, unusual, or disruptive- blocking roads n' so forth, since they most likely can't or don't live anywhere near people and probably stake out MASSIVE territories where they'd nomadically binge eat while keeping tabs on food sources as they mature or ripen and produce. Orangutans actually do this in real life. They claim huge territories and run a circuit since all the trees fruit at a different rate/time- Snorlax probably have every berry tree's fruiting period memorized.
They're also probably champs at intimidating or scaring away actual predators from their kills; eating everything and not even leaving hair or bones behind.
Their scat would be HORRIBLE too, but I bet it'd be good for the woods n' so forth.
