Agility is better in UU where things are not as strong/bulky so he can get away with ditching SD in favor of a coverage move and can use it's alright special bulk to agility up with the aid of a defensive tera or a passive mon in front of it, while not losing out on kills because gallade already hits hard af.
Double Dance is cute but Gallade's third coverage move is pretty much essential as it allows it to choose what checks it and what doesn't (leaf blade is very common since it's 135 BP and it kills slowbro/king, whom can wall its stabs, while being neutral on things like hatterene and other psychics).
