Basically, the Prospector is a replacement for the Hiker class: they prefer ground and rock types, and are usually found near mountains and rivers. After being defeated, Prospectors will typically give the player a nugget of varying size.
They also talk with a heavy, kind of exaggerated dialect, peppered with "cusswords" like "dang nabbit", "fiddlesticks", "consarnit" and so on.
