Larry is a salaryman, Brycen was an actor, Elesa and Nessa model, etc. I think the best way you can make trainers and pokemon stand side by side is through just exploring the relationships between them. Outside of battle you can see how they might interact with eachother. With what I did in a pokemon tabletop I had some of the team react differently to commands. Kamimon was a bit stupid and had poor battle sense, he often won due to type advantage or just pure luck. His Blastoise was just as headstrong so he followed commands while his Accelgor did its own thing most of the time because it has more battle sense than Kamimon.
I think the most interesting way you could make trainers stand out is how effective their battle strategy can be. It'd likely be more effective to do this in a comic or show so you can bend the rules with moves/abilities but it's definitely possible in a game scenario.
