Catalogue weight is a baseline. Pokemon get heavier as they level up thanks to training (or bulking up with fattening nutrient-dense rare candies). They evolve using resources they already built up inside themselves, which is why they evolve at certain levels. This is what happens when you teach kids math and science but forget to teach them basic fucking LOGIC.
