Any binder that 1) Zips up and 2) side loads the cards 3)portfolio style without rings -- will be good.
As for sorting, that's all up to you. If you have entire sets, going by set number is a nice way to view everything. But if you don't have complete sets, and don't wish to complete them in the future, then you get to design your layout however your autism deems fit. By type, by holofoil style, by artowrk theme, by illustrator, by pokemon, by whatever...
And if you don't care about viewing them, or just want to view them individually. A shoebox with toploaded cards works well.
