Like someone else said, it's not a case of the humans being durable, it's a case of cartoon physics and censorship; they can't show a human being killed in this series, so everyone survives Pokemon attacks.
Plus stuff like this lady's husband dying in a vehicle crash contradicts it. Just like how Pokemon themselves can survive Pokemon attacks without any issue, but outside of battle, are just as fragile as any other living creature (an Eevee getting seriously injured from humans accidentally stepping on it even though it was just fine after a Thunderbolt, Zeraora hurting itself catching a boulder and taking an entire year to recover, Snubbull instantly dying in a fire).
