Younger professors would likely have been working on it since they were young while older professors may have gotten into it later or just liked what they do ever since their youth.
People associate professors generally with lab coat, though I think it's only when they're on the job (except Oak, who is on the job 24/7
and is probably based on the age of actual oak trees).
For me, any original professor would probably revolve around a reason/purpose for why they came into their profession in the first place. Their attitude/personality trait would probably leave occasional hints about their cause.
Of course, whatever activities they do in their research is up to you.
In general, think about the same processes that create a lot of OC
donut steel characters. It probably follows the same, or at least a similar route.
