For battle purposes- movepool is combined - general rule of thumb is that physical moveset/physical attack and defense are taken mostly from body (2nd mon) and special stats/movepool from the head (1st mon). Even if you choose not to evolve the head, you still get the evolved moves and stats.
Abilities come from the first mon too.
EXAMPLE: i roll Gaschop (Gastly+Machop). Its final stage could be any of Gaschamp, Hauntchamp, or Genchamp, but could never be Genchop. No matter which of these it becomes, it would have Cursed Body and Gengar's Special stats/movepool.
