The magic that Psychic-type covers is almost all stage or performance-type "magic" (like spoon bending, hypnotism, miming, etc.), rather than the sorcerous kind. Even Braixen and Delphox, seemingly the only exceptions up until now, are based on oracles as well as magical girls/mages. Magic as a whole is one of those nebulous things that's spread out through all of the types, like light and sound are, which is why we have stuff like Mystical Fire and Magical Leaf. No single type covers it.
Of course, Galarian Ponyta throws a massive wrench into this, and by all means makes no sense as a Psychic-type whatsoever. Even if Psychic were the catch-all for every other magic, Galarian Ponyta's magical abilities are clearly and unambiguously covered by Fairy-type.
