Unown create everything in the pokemon world. Any matter. They are the "higgs field" of the pokeverse. Their home is a parallel universe or better said dimension or field layered right on top of the "real" world made out of matter.
They perform symetric dances and the pattern of those dances act like program code. Their combined power creates matter corresponding to their dance.
Arceus is able to use his own will to influence Unown enough to do as he wishes. Arceus knows what code is needed in order to create things.
This is shown in HGSS when you meet Cynthia if you bring an special event Arceus. He creates an egg in front of your eyes according to your wish which legendary you want.
Not only Arceus is able to influence their dances over in the parallel universe but strong feelings, love, willpower and anger reach them.
So whenever two pokemon love each other they sense the love and their love influenced dance creates an egg. Yeah, they really had no idea how that egg all of sudden appeared - the day care never lied to you. This goes for elemental attacks spawning water for example or a Pokmeon evolving too. Say if a Pokemon needs more power to defend something important let's say their kids their wish to be stronger can trigger evolution. The dance representing the matter of the body of said pokemon changes out of pure willpower and reforms itself into another which creates a new form for that pokemon - Evolution as we know it.
